Soy Sauce Chicken Breasts

This is an unbelievably easy and quick way to prepare a filling and deeply satisfying chicken dish for a usual afternoon or even a party.

Chicken in Soy Sauce:

  • 4 pieces of chicken breasts
  • 4 spoons of soy sauce
  • 4 spoons of vegetable oil
  • 2 spoons of flour

Cut the breasts into slices of your preference. Pour and sprinkle in the the rest of ingredients and let it rest while the pan gets hot.

Use truly high heat and make sure the pan absorbed enough of it. Sear about a third of the chicken breasts at a time. To keep the outside a bit crispy, make sure the pieces have enough space and do not touch. This way, the water evaporates and the meat is not stewing. Let the meat sear quickly and turn often. Remove from the pan when the chicken turns golden.

As you have probably noticed, the number of chicken breasts determins the amounts of the rest of the ingredients. It is easy to calculate what you need for one person or a swarm of hungry birthday party guests.

The choice of meat matters:

Each piece of any animal has different properties and qualities. It depends on the function of the muscles or organs, the amount and distribution of fat and skin, the presence of bones… Each animal part is suitable for a different type of preparation.
In this recipe, the chicken breasts are ideal because they are lean and very quickly done. They need a short time on high heat to stay juicy and soft inside and acquire the seared tasty outside.
Chicken legs are not the best choice for this. They have a much tougher structure and need to be cooked much longer to soften. The soy sauce and flour would burn on them by that time. Chicken legs are much better for stews and baked dishes, where the breasts would loose all juices and turn into sawdust dry pieces of meat.

A friend of any side dish:

This chicken goes with rice, potatos, pastry… or even a colorful vegetable salad. You can risk and play with side dish ideas without worrying. Standard white rice, or curry rice with green peas?
